Layers of grilled zucchini, roasted red bell peppers, polenta cake, sautéed spinach and breadedeggplant. Served with a roasted yellow mole sauce.

Fresh medley of charred broccoli, snap peas, cucumber, spring mix, avocado, hardboiled egg and brown rice. Drizzled with a fresh herb green goddess dressing.

Ricotta Gnocchi with Pesto Sauce

Pan seared ricotta dumplings served with a fresh basil pesto sauce, cherry tomatoes,sautéed spinach and parmesan cheese.

Spinach and Mushroom Manicotti

Crepes filled with a forest mushroom medley, spinach and butternut squash. Topped shepherds’ cheese and creamy bechamel sauce.

Roasted sweet potatoes with black beans and guacamole. Served with a white bean and spinach enchilada with yellow mole sauce.

Tofu Tikka Masala

Indian tofu stew with cauliflower, carrots, mushrooms, English peas, peppers and tomato sauce. Slow simmered with coconut milk.

Curried Cauliflower and Cous Cous

Roasted cauliflower with curry oil served with pearled cous cous, chickpeas, lentils and garlic. Topped with tzatziki sauce, almonds and cilantro leaves.

Herb Crusted Cauliflower Steak

Whole sliced cauliflower steak with parmesan and panko breadcrumb crust. Served with julienne vegetable medley and garlic lemon sauce.
