Inclusive with taco bars are locally made flour and corn tortillas, queso fresco, Oaxaca cheese, shredded cabbage, romaine lettuce, key limes, hot sauces and diced white onions/cilantro.

SIGNATURE CARNE ASADA

Red chile adobo rubbed “Harris Ranch” Prime skirt steak grilled to perfection and cubed. (Slight upcharge for prime cut) 

BARBACOA BEEF

Red chile braised beef with red chile, tomatoes, onions and beef stock.          Shredded and tossed with braising liquids 

CHICKEN AND CHORIZO

Minced chicken breast sauteed with local chorizo, onions and cilantro

CITRUS AND HERB CHICKEN

Diced chicken breast with Mexican herbs, lime zest, garlic and olive oil.

CHICKEN TINGA

Sweet and spicy braised chicken breast in chipotle tomato sauce.

PORK CARNITAS

Slow roasted marinated pork butt with Mexican seasonings.

PORK AL PASTOR

Pork tenderloin sauteed with pineapples, onions and pastor sauce.

Diced Mexican shrimp sauteed with a sweet and spicy red chile sauce.

Santa Fe Style Calabacitas

Sauteed New Mexico green chiles, zucchini, yellow squash, roasted corn, onions and garlic. Tossed with a poblano cream sauce and fresh cilantro.

Innovative style enchiladas with locally made corn tortillas.

NEW MEXICAN STACKED ENCHILADAS

Stacked corn tortillas with spicy green chile meat sauce and Oaxacan cheese. Garnished with Mexican creme, green onions and radishes.

RANCHERO SHREDDED BEEF ENCHILADAS

Shredded red chile beef enchiladas filled with Oaxaca cheese. Topped with a tomato-serrano sauce and white onions.

CHICKEN ENCHILADAS AL PASTOR

Rolled corn tortillas filled with achiote marinated rotisserie chicken. Topped with a green tomatillo sauce, queso fresco and cilantro.

BLACK BEAN AND CHORIZO ENCHILADAS

Triangular folded corn tortillas with a black bean sauce topped with chorizo cotija cheese, pico de gallo and Mexican crème.

SPINACH AND CHIPOTLE ENCHILADAS

Rolled corn tortillas with sauteed spinach, garlic and queso fresco. Served with a silky chipotle cream sauce.

TUSCAN KALE AND WHITE BEAN ENCHILADAS

Braised kale and white bean enchiladas filled with Oaxaca cheese.

PINK GROUPER VERACRUZ

Pan seared Baja white fish with fresh tomatoes, capers, pickled onions, garlic, white wine and Mexican herbs. 

CHORIZO STUFFED PORK LOIN

Cider brined pork loin stuffed with a cornbread and chorizo stuffing. Served with a mild jalapeno pepper jelly.

CHIPOTLE- BARBECUED BABY BACK RIBS

Smoked baby back pork ribs served with a smoky chipotle BBQ sauce.

POLLO FUNDIDO

Braised chicken breast with green chiles and tomatoes. Wrapped in flour tortilla topped with a jalapeno cream and cheddar cheese. 

GREEN CHILE PORK STEW

Slowly cooked  pork shoulder with tomatillo sauce, green chiles, onions, potatoes and chicken stock. Served with a side of flour tortillas.  

GUACAMOLE TOSTADAS

Crispy tostada shells topped with guacamole, shredded Oaxaca cheese, romaine lettuce and pico de gallo.

Sweet Potato and Mushroom Quesadilla

Sautéed sweet potatoes, mushrooms and spinach. Wrapped in a flour tortilla filled with Oaxaca cheese and green chiles.

CHRISTMAS EVE SALAD

Seasonal greens with orange segments, radishes, pickled onions, pine nuts and jicama. Served with a jalapeno-vinaigrette.

BAJA CAESAR SALAD

Baby romaine hearts tossed with our award winning dressing, queso fresco and corn tortilla strips.

MEXICAN TOMATO SALAD

Heirloom tomatoes declaratively arranged with Oaxaca cheese, serrano ham and green chile vinaigrette. Garnished with fresh cilantro.

GREEN BEAN SALAD

Haircot-verts tossed with a radishes, red onions and tomatoes and slivered almonds. Tossed with a queso fresco vinagrette. 

MEXICAN RED RICE

Long grain white rice with garlic, onions and fire roasted tomatoes.

VERDE RICE

Long grain white rice cooked with poblano chiles, cilantro and spinach.

ARROZ CON CREMA

White rice with poblanos, chihuahua cheese, roasted corn and crème.

DRUNKEN BEANS

Slow cooked whole pinto beans with onions, tomato, bacon and beer.

REFRIED BEANS

Crushed pinto beans with beef fat, onions and roasted garlic.

Mashed russet potatoes with garlic, creme and chipotle butter.

Fresh grilled corn off the cob with chipotle mayo, cotija cheese and hot sauce.

CALABACITAS

Sauteed zucchini, yellow squash, corn, tomatoes and green chilles. Simmered in a garlic-cumin cream sauce.

GRILLED VEGETABLE MEDLEY

Grilled zucchini, yellow squash, bell peppers and red onions. Marinated in a green chimichurri marinade.

Garlic and Poblano Mashed Potatoes

Mashed russet potatoes with garlic, poblano, spinach and cilantro infused cream. Topped with chile butter and paprika.

Mexican chocolate custard cups with a hint of chile. Served with fresh whipped cream.
