Choose from the following selections to create your own breakfast buffet.
Buffets can be arranged on an Island in your home or with skirted tables placed somewhere within the confines of your home.
Inclusive with all buffets are china plates, linen napkins, silverware, chafing dishes, platters, serving utensils, risers and buffet decor.
Minimum 12 guests – Maximum 50 guests

BLOODY MARY BAR

Create your own Bloody Mary served with the following accoutrements:  Premium Vodka – House-Made Bloody Mary Mix – Celery Stalks – Carrot Sticks – Stuffed Olives – Cucumber Slices – Pickled  Asparagus-  Peppercini – Limes – Horseradish – Assorted Hot Sauce.

  Individual mini mimosas for your guests to sample. Includes 3 of the            following selections, glassware, premium champagne and garnishes.           Pink Lemonade –  Orange Creamsicle – Blueberry Lavender

NEW MEXICO STYLE HUEVOS RANCHEROS

Farm fresh eggs served over layered corn tortilla enchiladas with local chorizo, diced onions, red chile beef sauce and Oaxaca cheese.
Garnished with creme, pico de gallo and fresh cilantro.

ROASTED TURKEY AND VEGETABLE QUICHE

Thick house made pastry crust with roasted turkey breast, sauteed spinach,          diced onions, local king trumpet mushrooms and gruyere cheese.         Served with an arugula and fennel salad with herb vinaigrette.  

DULCE DE LECHE FRENCH TOAST BAKE

Battered and stuffed French toast with dulce de leche cream and topped with a pecan and brown sugar sauce.  

CORNFLAKE- CRUSTED FRENCH TOAST

             Butterscotch battered brioche bread with a cornflake crust..                   Topped with a fresh strawberry sauce and fresh whipped cream.     

BISCUITS AND GREEN CHILE PORK GRAVY

Flakey buttermilk biscuits topped with a New Mexico green chile/ pork gravy. Classic white sausage gravy available upon request. 

MODERN EGGS IN A NEST

Flakey puff pastry filled with havarti cheese, parmesan cheese, bacon bits and eggs. Baked till golden brown and topped with fresh chives. 

HUEVOS MOTULENOS

Crispy corn tortillas topped with black bean puree, thick cut cubed ham, peas, queso fresco, ranchero salsa and sunny side up egg. 

PROTEIN BREAKFAST BOWL

Poached eggs with sweet potatoes, red quinoa, wilted spinach, roasted  shiitake mushrooms, pepitas, turkey sausage and oven roasted tomatoes.

LEMON RICOTTA PANCAKES

            Lemon zest flavored batter with buttermilk and buckwheat flour.          Served with real maple syrup and whipped butter. 

HAWAIIAN MOCO LOCO

House ground beef patty served over white rice, beef gravy and poached eggs. Garnished with fried onion straws and diced chives.

Local award winning croissants filled with pastry cream and nutella.Topped with toasted slivered almonds and powdered sugar.  

FROZEN ACAI BOWL

Fresh seasonal fruit with house made granola, almond butter, shredded coconut, chia seed and frozen acai.

LEMON- BLUEBERRY PARFAITS

Individual champagne flutes filled with lemon greek yogurt, blueberry compote and house made granola with nuts. 

HOT GRAINS BOWL

Toasted farina with carrots, almond milk, cinnamon, cardamon, almonds, dried apricot, sliced oranges and local honey. 

STEEL CUT OATS AND APPLES

Organic Irish oats with oat milk, vanilla and cinnamon. Topped with a mixed nut crumble, golden delicious apples and flax seeds. 

FRESH FRUIT PARFAIT BOARD

Two types of kefir yogurt, house made granola, seasonal berries, lemon curd, dried fruits, coconut flakes, assorted nuts, maple syrup, local honey and fresh mint.  

SCRAMBLED EGGS AND SCALLIONS

Farmers market local fresh eggs with lightly sautéed green onions, french butter and parmesan cheese. 

BREAKFAST MEATS

Choice of:
apple wood smoked bacon- turkey sausage- pork sausage patties- thick cut ham steak- Canadian bacon- petit cut filet mignon

BREAKFAST POTATOES

Country Potatoes- sauteed with onions, peppers and smoked herbs. Hashbrown Casserole- with cheddar cheese, sour cream and onions.

BAGEL AND SMOKED SALMON PLATE

Assorted bagels with Nova Scotia smoked salmon, cream cheese and Mediterranean relish with bell peppers, capers, red onions, dill and olive oil. 

COFFEE AND JUICE STATION

Inclusive with stations: decorative rose gold coffee decanters, coffee cups, juice glasses, creamer, sugar caddies, lemons, honey and stir sticks.
