Choose from the following selections to create your own breakfast buffet.
Buffets can be arranged on an Island in your home or with skirted tables placed somewhere within the confines of your location.
Inclusive with all buffets are china plates, linen napkins, silverware, chafing dishes, platters, serving utensils, risers and buffet decor.
Minimum 25 guests – Maximum 60 guests

BRUNCH ENTREES

NEW MEXICO STYLE HUEVOS RANCHEROS

Sunny side up eggs served over layered corn tortilla enchiladas with       locally made chorizo, red chile sauce and Oaxaca cheese.
Garnished with creme, pico de gallo and fresh cilantro.

SHORT RIB AND SWEET POTATO HASH

Red wine and beef stock braised shredded short ribs combined with sautéed poblano peppers, onions, smoked herbs cubed sweet potatoes and yukon gold potatoes. Served with farm fresh poached eggs. 

BUTTERSCOTCH FRENCH TOAST

Thick cut Jewish challah bread dipped in a butterscotch and egg batter.
Topped with real vanilla pod butter and cinnamon-maple syrup.

CORNFLAKE- CRUSTED FRENCH TOAST

Pan seared crispy brioche bread crusted with cornflakes. Topped with a banana foster sauce with brown sugar, butter and whipped cream.    

BISCUITS AND GREEN CHILE PORK GRAVY

Flakey buttermilk biscuits topped with a New Mexico green chile/ pork gravy. Classic white sausage gravy available upon request. 

MODERN EGGS IN A NEST

Flakey puff pastry filled with havarti cheese, parmesan cheese, bacon bits and eggs. Baked till golden brown and topped with fresh chives. 

HUEVOS MOTULENOS

Crispy corn tortillas topped with black bean puree, thick cut cubed ham, peas, queso fresco, ranchero salsa and sunny side up egg. 

PROTEIN BREAKFAST BOWL

Poached eggs with sweet potatoes, red quinoa, massaged kale, pepitas, turkey sausage and oven roasted tomatoes. Served with a broccolni pesto.

COTTAGE CHEESE BOWL

Cottage cheese topped with granola, fresh berries, china seeds, dried fruit and drizzled with fresh local honey.

LIGTHER FAIR AND SIDES

ORANGE BLOSSOM MOLD

Impressive layered gelatin mold with fresh fruit, pineapple and orange jello, cream cheese and toasted nuts.

CONTINENTAL BREAKFAST

Seasonal melon and berries with assorted muffins and local breads.

                  Seasonal berries with a strawberry yogurt and vanilla granola.              Served in decorative glassware.

STRAWBERRY AND RICOTTA BRUSCHETTA

Toasted baguette bread topped with a strawberry-ricotta spread and macerated strawberries with fresh mint.

OATMEAL AND APPLE BRULEE

Steel cut oats with sautéed apples, cinnamon and vanilla topped with a caramelized hard sugar crust.

SEASONAL MELON AND BERRIES PLATTER

Seasonal assortment of cantaloupe, honeydew, watermelon, strawberries, blueberries, raspberries and boysenberries.

SCRAMBLED EGG PLATTER

Farmers market local fresh eggs with real French butter, fresh chives and grated parmesan cheese.

Assorted bagels with smoked salmon, cream cheese and Mediterranean relish with bell peppers, capers, red onions, dill and olive oil.
